Scrub potatoes and pat dry. Cut each potato into 8 wedges and place in a bowl.
Add olive oil, paprika, garlic powder and a sprinkle of salt & pepper to the wedges. Toss to coat evenly.
Place the wedges in the air fryer basket in a single layer (you may need to work in batches)*.
Cook in the air fryer at 400 degrees for 20 minutes (flipping halfway).
Top with additional salt if needed and serve with your favorite dipping sauce. I went with ketchup and my Chipotle Ginger Dressing.
*If you are working in batches, place the cooked wedges in foil to keep warm while the second batch cooks.
