Vegan Pesto Mayo

Ingredients

  • 1 cup fresh basil packed
  • 1 cup walnuts*
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/3 cup vegan mayo
  • salt and pepper to taste

Instructions
 

  • Add the first five ingredients to a food processor and blend on high until smoothie and combined, scraping down the sides as needed.
  • Add salt and pepper, and pulse to combine. Taste and adjust seasonings as needed.
  • Add to your favorite sandwich and enjoy!

Notes

*For a smoother texture, use 1/2 cup of walnuts instead. I wanted this to be a really nutty and chunky pesto.
