Sheet Pan Breakfast Potatoes

Ingredients

  • 1.5 lbs red potatoes cut in bite-sized pieces
  • 1/2 green bell pepper diced
  • 1/4 red onion diced
  • 2 cloves garlic diced
  • 1 serrano pepper sliced thin (optional)
  • 1/2 tsp. paprika
  • 1/4 - 1/2 tsp. cayenne
  • 1/4 tsp. black pepper
  • 1 tbsp. vegan butter melted
  • 1 tbsp. olive oil
  • salt to taste
  • Cilantro optional

Instructions
 

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • Combine potatoes, bell pepper, onion, garlic, serrano pepper, paprika, cayenne, pepper, butter and olive oil in a large bowl. Stir to coat evenly.
  • Spread potato mixture on the baking sheet. Place in the oven for 25 minutes, flipping halfway. Increase heat to 500 degrees and cook until crispy - approx. 10 minutes.
  • Remove from oven and top with salt and cilantro.
  • Serve with hot sauce or ketchup.
