Spicy Red Pepper Hummus

Ingredients

  • 1 can chickpeas drained and rinsed
  • 1/2 jar roasted red peppers approx. 4 oz.
  • 1/2 lemon juiced
  • 2-3 cloves garlic
  • 3 tbsp. tahini
  • 2 tbsp. olive oil + more for topping
  • 2-3 tbsp. water
  • 1/4 tsp. cumin powder
  • 1/4-1/2 tsp. cayenne pepper to taste
  • 1/4-1/2 tsp. red pepper flakes to taste + more for topping

Instructions
 

  • Combine all ingredients in a food processor and blend until smooth. Add more water if needed.
  • Transfer to a bowl and place in the fridge for at least 30 minutes for the flavors to combine.
  • Remove from the fridge and top with additional oil and red pepper flakes.
  • Serve with chips, veggies or crackers.
