4-6cupskalecut in bite-sized pieces and stems removed
1-2lemonsjuiced
1recipeSimple Crispy Vegan Falafel12 balls
1recipeThe Best Tahini Dressing
1/2red onionthinly sliced
15oz can white beansdrained and rinsed
1jalapeñofinely chopped (optional)
2slicespita breadcut in square
Instructions
Place the kale in a large bowl and drizzle with lemon juice. You may need to use more than one lemon depending on how how juicy your lemons are. Massage your kale for 60 seconds - incorporating the lemon juice into the kale. Place in the fridge until ready to use.
Prepare Tahini Dressing according to instructions and place in the fridge until ready to use.
Assemble salads: Divide kale between four bowls. Top each bowl with 3 falafel balls, red onion, white beans, jalapeño (if using) and pita slices. Drizzle dressing over each bowl. Serve and enjoy.
Notes
If meal prepping: separate kale, red onion, white beans and jalapenos into four bowls. Cover and store in the fridge. Store cooked falafel in a separate container and heat one serving of falafel before eating.
