Salads got a whole lot tastier with this Vegan Meatball Salad with Creamy Dreamy Green Sauce. Packed full of butter lettuce, cauliflower meatballs, red onions, jalapeños and the BEST green dressing.

Ingredients

  • 1 tsp olive oil
  • 12 Cauliflower Meatballs*
  • 1 head butter lettuce or greens of choice
  • 1/2 red onion thinly sliced
  • 1 jalapeño optional
  • Creamy Dreamy Green Sauce**
  • 1 lemon cut in wedges

Instructions
 

  • Heat olive oil in a pan over medium heat. Add frozen meatballs and cook until browned on all sides and warmed through (approx. 10 minutes).
  • Chop lettuce, red onion and jalapeño and divide among 4 plates.
  • Prepare Creamy Dreamy Green Sauce according to instructions. 
  • Top each salad with 3 meatballs and add dressing to taste. Serve with lemon wedges.
