Pan Seared Vegan Pesto Gnocchi

This Pan Seared Vegan Pesto Gnocchi combines gnocchi that have been browned in vegan butter with fresh pesto for a quick weeknight dinner.

Ingredients

  • 16 oz package gnocchi
  • 2 tbsp butter
  • 1/4 cup vegan pesto
  • 1/2 cup non-dairy milk unsweetened
  • fresh basil, vegan parmesan optional toppings

Instructions
 

  • Bring a large pot of water to a boil. Add gnocchi and cook for 3 minutes (or until they float to the top). Drain and set aside.
  • Melt butter in a pan over medium heat. Add gnocchi and sear until browned (allow to sear for at least 3 minutes before moving them). 
  • Add pesto and milk to the pan and sauté until milk has reduced and everything is combined (approximately 2 minutes). 
  • Remove from the heat and serve immediately. Add optional toppings if desired.
