This Chipotle Lentil Avocado Toast is the ultimate vegan brunch meal - sourdough bread topped with avocado, greens and warm chipotle lentils.

Ingredients

olive oil

shallot
diced
▢

clove
garlic
diced
▢
1
chipotle pepper in adobo sauce
▢
1-2
tbsp
adobo sauce
from the can
▢
1
cup
cooked lentils
▢
2
avocados
▢
1/2
tsp
garlic powder
▢
salt & pepper
▢
4
slices
sourdough bread
or bread of choice
▢
2
cups
arugula
or greens of choice
▢
cilantro, hot sauce, chili oil
optional toppings
Instructions
Heat olive oil in a pan over medium heat.
Add shallot, garlic, chipotle pepper and adobo sauce to the pan and sauté for 3 minutes.
Add lentils to the pan and stir to combine. Taste and add salt & pepper to taste. Turn heat to low until ready to eat.
Add avocados, garlic powder and a pinch of salt & pepper to a bowl. Mash avocado with a fork and set aside.
Toast bread.
To assemble, spread equal amounts of avocado on each slice of bread. Top with a handful of arugula and a 1/4 cup of lentils.
Add optional toppings of choice and serve!
